Fuu. One hears it as a more polite way of saying manure, I suppose because it comes from the organs. Words. What you lot call offal, those are guts. ---

So, I did a little looking, and it looks like “offal” also includes byproducts of a “process” generally, including viscera (byproducts of slaughtering cattle). That could be taken to include animal byproducts, though I think that might be a slight misusage. Anyway, it seems to be refuse or waste material broadly, including rotting meat, so including dung in that (not specifically, but as part of the broad category of “offal”) doesn’t seem like too much of a stretch. And it does seem to include a LOT of stuff that probably doesn’t get included in recipes very often. That’s probably a narrower and more specialized use of the term. ---
