I wonder if it would be possible for a future endeavor to have the feature for a Black and White color scheme for your character portrait?

Even without such a setting you can accomplish a mostly black-and-white portrait already.
Take one of the lighting options with the least colour, in combination with black/grey/white apparel and a greyscale background.
For example, one of my characters I gave a (mostly) black and white scheme on purpose:
