Eve will remember the last combination of payment type and subscription length you used. It will renew automatically when the current subscription expires.
You can cancel the Paypal subscription - doesn’t affect your remaining game time - just cancels the automatic renewal. When you get close to the end, login to account management and add game time using the new method of payment.
Login to paypal and cancel the recurring subscription, when your game time expires choose to add game time with CC.

Actually, log into EVE’s Account Management and cancel your subscription from there, then enable subscription again with the different payment method. If you cancel from paypal or block payment from your CC, CCP will ban your account until you call them to explain what’s what (source=HelpDesk article, last paragraph).
