Pyfa will let you play with fits for mining yield. I tried a fairly basic Procurer fit with a high skill character:

The results:
Adding an additional mining laser upgrade or Augmentor rig would bump the yield a bit but I don’t recommend it. The Procurer is intended to optimize tank over yield (64.7K EHP with my character and this fit). Play to its strength - for max yield use the Covetor but build an occasional loss into your business plan.
