Been trying to refit the Odysseus while undocked but with no success.
is there a way to do this?

I know a mobile depot is always an option, but since the Odysseus can allow other ships around it to refit in space, thought it could also refit itself
No ship that allows other ships to refit via its fitting service can refit itself. This would be imbalanced and overpowered and gamebreaking.
The Odysseus is already incredibly powerful (too powerful for my liking, I hope it gets the nerf-bat sooner than later), it absolutely certainly does not need even more power.

then I guess mobile depot it will be XD
was just wondering if self-fit was possible before I take it out on a long exploration so I will know if I need a mobile depot with me 
don’t know if its too powerful or not. for me it just allows for longer explorations and being able to do a few more things while exploring.
