I’m new to roll playing in Eve, but I’m interested in trying it out. Are there any Newbie friendly groups? Or is there a better way for me to get involved?

My own advice is to take it easy, start interacting IC with other RPers, and start back-filling your character concept as these interactions give you ideas. Don’t put yourself in a straitjacket.
