What you seek is almost impossible to get from Mercenaries. Because that would be a permanent protection contract, meaning they would have to be ready to secure your mining operations and just idle until someone tries to attack you and then scare him off. Nobody does that. It’s incredibly boring and since Mercenaries are PVPers, they hate boring waiting gameplay. Also beware of scammers. Don’t send anyone money before you have double-checked his reputation. Mercenary services are often abused to take people’s money for free and then not even showing up.
You still have two good options:
a) join an alliance that offers protection via their cyno umbrella. Which means anytime you do a larger mining operation you take a cyno ship with you and notify the standing fleet of the alliance. In case of an attack you light the cyno and support ships can jump right to the scene.
Most likely you will find that one in Nullsec, and you will have to learn some new gameplay rules to survive. Nobody can efficiently protect an idiot (no offense) who refuses to stick to some basic safety rules.
Mining this way can be pretty safe and lucrative, in return you’d have some kind of agreement with the alliance. Either sell them the ore/minerals for a discount price, pay some kind of tax and obligate yourself to take part in defensive operations (don’t worry, showing up every once in a while in a basic T1 Battlecruiser and just shooting what the FC tells you until either you or the opponents are dead is mostly enough).
b) Look for an uncolonized wormhole and set up a base there. You will also need to learn new mechanics and are self-responsible for your safety. However, you have very good methods of securing your mining operations (closing all holes, reducing the chances that someone will even find you to a bare minimum). Gneiss and Gas offers a very good income and the hacking sites in the lower class WHs also pay well, even for beginners. And over time you will learn how to do the combat-anomalies and data/relic combat sites. Also PI is excellent in WHs. Via the randomly spawning K-Space exits in wormhole space, you will also have very good access to the highsec trade hubs once every few days.
So, a wormhole, while challenging is an excellent environment for a small corp to grow while still staying independent. Make sure to connect yourself to other wormhole groups, most are willing to help you on your feet and support you in the beginning. Sometimes long-lasting friendship comes out of that and they will even show up when it is time to defend your home hole. I’d give that a try, it is the best space to live in, by a huge margin.
