hiding your age and employment in game won’t do anything to help you.
There is still EVE who, plus when you join up to corps most ask for your info to see employment history and such. so there are other ways to see your corp history and age, without being in game… just a moot point to be making tbh.

As you’re a new player, your age and employment history are already ‘hidden’.
People make new alts all the time. Whenever you see a young character without employment history the intel on that character is basically hidden. It could be an injected blops hunter. Or just a newbie explorer. You’ll never know.
Now if you were asking to hide age and employment history for a 10 year old account with lots of corp hopping, that would make sense (and I’d still disagree with that possibility), but as a new character: your intel is already hidden.
