Yesterday I went to buy 12 months of Omega, but I accidentally ended up buying Multiple Pilot Training instead. Is it possible to convert to 12 months of Omega?

Make a Ticket with CCP and explain your mishap. Not much we can do here.
Converting 12 of one for 12 of the other may be hard as Omega is considerably more expensive than Multiple Pilot Training after the recent price adjustments.
But you should ask support in a ticket to see what they can do for you.
