It’s just a quality of life thing, being able to unfit and automatically repackage modules at the same time would just benefit for those who like to keep everything clean and it saves extra steps and extra clicks.
The menu option you’re looking for there is called “Strip Fitting” if you right-click a ship, and “Remove Module” when you right-click a module in the fitting window.
