Honor isn’t asking for a dual, honor is not butting into someone elses fight until they finished their 1v1, perfectly fine to just start attacking another player and still be honorable.
Well I wish you luck in devising an ‘agreeable moral code that improves everybody’s gaming experience’ because it seems to me you are trying to merely impose your own moral code on others as a missionary would. The game works because of its divergence of viewpoints and practices, to homogenise these would dilute, if not extinguish, the gaming experience, just like homogenisation does in real life.
Do you really just want to be able to puddle about doing your mining or hauling, or mission running, making ISK endlessly for its own sake, to make a bigger ship that just does the same thing, or is it perhaps more fun to have evaded a gank attempt whilst carrying that cargo that was just a bit too valuable…
I don’t hi-sec gank to date, but I sure get a rush when I skip around a gate camp, or wriggle away from being scrammed. I also like it when I track down a clever hacker or a hard to get to gas miner in my wormhole bomber and destroy them in spite of the precautions and evasions they manifest, and my complete lack of tank.
You seem to be proposing limiting PvP to a kind of ‘pistol duelling at sunrise’… of course that is illegal too and at odds with most moral codes. Perhaps we should we sign electronic contracts as evidence of consenting to a PvP act? It would still be illegal, and immoral.
If you are not happy with the fundamental design of the game maybe there is another game that gives you what you wish. Nevertheless divergent viewpoints keep things fresh. Keep up the good work!

Well actually, as it happens, I didn’t. So I left the job I hated and now live on a combination of savings and a couple of delivery runs I walk each week admiring the views and improving my fitness level. A fairly austere existence, but I have no idiot manager solely concerned with meeting his KPI’s for his bonus whilst essentially asking me to engage in unsolicited PvP against real people to prise real cash from the unwitting, spent on the unnecessary. I have plenty of time, and no stress. The other thing I did once was teaching, but education I found a rather disillusioning mess.
I don’t believe there has been a murder of any kind here for quite some time, let alone one just to obtain a valuable item from a stranger, and I’m not a collector of things, so your analogy is only relevant to your own perceptions. You can mostly avoid being ganked by being alert, and being safe, and enjoy being successful at it. Strangely enough, gankers get ganked too. Why not join an anti-ganking group? I’m not really sure how they work, to be honest…
Finally, and this is the most important point. Your desire to change the fundamental way the game is designed, and the way people behave, is not going to happen. The choice for you is to decide if you can cope with it how it is, and take steps to play in it, or move on to something new. It’s a little pointless to stress out over something out of your control when you have a choice. I came to Eve after playing Warcraft for over 10 years and finding I was unhappy with the way things were developing. Haven’t been there since.

As Ramona said, Destiny’s thing these days is mostly trolling, sarcasm, argument-bait, making reductio ad absurdum arguments to mock the viewpoints they disagree with, etc.
It’s getting harder and harder to discern any value at all to Destiny’s posts. Which is a shame, as Destiny is fairly knowledgeable about game mechancis and used to at least occasionally have something useful to say.

I’ve never had an opponent in Chess give me my pieces back during a game (unless the very rare case of a pawn getting to the back row). I have remade innumerable breachers to replace ones that have been shot.
