Let me introduce you to a staple of starters and tapas in bars, restaurants and anywhere this fits:
Polbo a feira (Galician), pulpo a la gallega (Spanish), or octopus in Galician style. Baked potatoes, well cooked octopus tendrils (boiled whole in a copper pot, then sliced), a little oil and red pepper paprika (mildly hot) served on a small wooden plate for some reason I donât know but itâs always been this way. Bonus, often you can use some bread to soak the remaining oil and paprika after finishing the octopus & potatoes. And a warning: it will be very hot when served because it cools down very fast.
I had it just last sunday at a restaurant while eating with the family.

Thereâs no cheese, the slices are seasoned with olive oil, salt and red pepper paprika, either sweet or hot as you like it. It used to be a dish served in stalls at country fairs (hmmm⊠maybe thatâs the reason for the wooden plate?)
If you try at home⊠good luck, cooking octopus is not easy. The easy part is freezing it for a week and let it thaw at room temperature, or buy it already frozen (this way it will be clean too). Then youâll need either a copper pot or a stainless steel pot large enough to fit the octopus so it wonât hit the walls while cooking it. Then boil it hard until itâs at the right point⊠which for a 2.5-3 kg piece should be around 20 to 25 minutes. Try cutting a bit and chewing it. The problem is that overcooked octopus becomes unedible, rubbery and tough beyond repair, whereas udnercooked octopus is also rubbery and tough but will soften after cooking it longer (but not so long that overcooks). Slice with sharp scissors or an even sharper knife, serve on a sliced baked potato, season it with oil, salt and paprika and youâre done.
