The main games runs just great, but everything that requires data is extremely slow (loading inventory, docking / undocking etc).
I have tried restarting the game and the client, both to no avail. My internet connection is great (800 up & down with 5ms ping).
Other activities don’t seem to suffer any noticable hickups.
Any ideas?

While general Eve performance is way down, there is one thing in particular. Did you open the Opportunities Window?
If there are several “player missions” loading, loading them makes you very laggy, and the error in the internal window placement that makes them constant be rearranged at (least on some resolutions), will lag the GUI so much it is practically unresponsive.
This still partially applies while the window is minimized, so make sure to close it when not using it.
