Yeah, I’ve heard of nullsec ratting/belt ratting in assault frigates, if you have any fits for it, I’d like to know.
Do you want to claw your eyes out while nagging away on a BS or do you want to make money?

Haven Anomalies… well, maybe if you start right after downtime and bring enough ammunition, you can finish one before the server shuts down again. Would absolutely NOT recommend.
Belt ratting would work in Assault Frigates. But T1 destroyers can do it at least equally good if not better for less ISK invested.
But if you want to do it, you can.
About the fits: For belt ratting you want an AB to speed/sig-tank the rats. Since they can spawn farer away from your warpin to a belt or move around, dual-prop might be worth to take a look at.
The rest of the fit totally depends on the ship you fly.
Here is a video about T1 frigate ratting in low sec. Same applies to null sec belt rats, with the exception that they are a tougher. So a T1 frigate might actually have problems there, depending on the rats and fit. Assault frigates should do just fine - if you choose the right one. The native T2 resistance profiles they get do heavy lifting when you are getting shot by rats.
Go for an Erebus mouch better 
If you want to make some isk, you need to get into a bs
For the price tag of an assault frigate, you can buy and fit a t1 cruiser, which would be a huge performance increase and you can insure them.

cons : get alphaed in a single wrecking shot, low thermal resist, not capstable with everything on, need to play active.

same as above, better thermal res at the price of lower kin res, almost cap stable with mwd off, a bit more expensive.
Or Caldari style - The Harpy with neutron blasters. She is the highest ehp frigate in the game and can push out around 300-ish dps to the overheated range of a faction scram.
But please don’t tell anyone. Caldari are bad mkay.
