Asteroid belt mining isn’t often done in null sec, some regions as you have see do not even have asteroid belts with ore in it.
Besides static asteroid belts you can also find ore in other places to mine.
If you’re looking for ore to mine you could open the probe scanner window:
There you can find all sorts of anomalies, including ore, gas and ice anomalies. (If no anomalies show, check your probe scanner filters!)
And depending on if your space owns the sov in your area they may even have installed some ore upgrades so more ore anomalies spawn.
Which also is new is the Agency which is a UI interface which allows you to more easily find all sorts in space like these anomalies, see here:
It’s pretty good to find NPCs who give missions, planets to do planetary industry on or in your case find ore anomalies of a type you wish to mine.
Lastly if you like mining you could ask around if your corp or alliance has set up moon mining for their members. Upwell refinery structures like the Athanor and Tatara can drill moons, pull that chunk of moon towards the structure and explode it to become like a player-made asteroid belt with special moon ore. These moon ore rocks won’t be always available, but are pulled and exploded on a schedule set by the owner of the structure. For example once every two weeks on a Friday so you can mine over the weekend.
Ask around, your group may point you towards your moon schedule if they have any public moons that are available for all members. Mine does.
It’s also possible that your group exploits moons passively with Metenox moon drills, sells the rights to exploit these moons to single renting players, or doesn’t have access to moons at all, in which case moon mining won’t be available to you… unless you sneak in and mine some somewhere else pulled by the Athanor of another group.
