I’m still fairly new to EVE (around 1 year or so), so I can’t exactly comment too heavily on the mechanical functionality of Photon with as much expertise as someone else, but the biggest thing for me right now is the lack of themes. Not only are there fewer overall themes, but the themes do less on Photon than they did on the old one. On the old (current) UI, the theme changes the entire UI’s color— every window and everything. On Photon, it’s basically still just a whole lotta grey, with a few theme-colored elements here and there. I really hope this is improved prior to final launch so that the themes are closer to the current ones.
