Sure, but the bank doesn’t lock out the guy carrying the cash until he gets mugged.
As Black Pedro wrote, it’s true of any ship and not unique to Freighters. It’s also not unique to ganking. There are plenty of examples (eg. RekkingCrew and their capital killing methods) of similar situations.
However, Freighters do have methods of self defence. What’s lacking is the ability/preparation/willingness to use the mechanics as best as they can be.
Looking for example at the Obelisks ganked in the last 30 days. There have been 42 ganked (12 others lost to wardecs) and the number of gankers required to gank those ships is plotted below:
So the minimum number of gankers has been 11.
Yet most Freighter pilots that end up ganked, do so flying alone. A fleet against 1 isn’t unbalanced. That it takes 11-43 gankers is good balance.
It takes organisation to gank, and organisation is also a perfect defence. If each Freighter was in a fleet of 11 designed to protect it (eg. scout, webber, logi, etc.) how many do you think would be ganked? It would be near 0
What that graph also shows, limited by being only on the last 30 days of Obelisk ganks, is that 1 Freighter pilot is more than a match for 10 gankers. The high HP of freighters provides a balance of its own, but that balance can be even further enhanced by not flying alone.
In that same set of data, the mean security status of the gankers is -8.2 and the median is -10
Here’s the data breakdown of sec status:
942 gank ships to kill those 42 freighters. The first 805 (85%) of the gank ships were flown by outlaws.
There is nothing mechanically that is stopping anyone from shooting first.
As for bumping, the solution that reduces the risk to near 0, is a webbing alt. One freighter pilot with one webbing alt reduces the already low chance of being ganked to near 0. It’s a simple and effective method and still far less organisation than that required to gank you.
For that, you really need to ask the individual freighter pilots, since the risk is at the level they choose to take.
From a ganking perspective, 1 ganker is not going to kill a freighter. Nor is 2, or 3, or 4, etc. Gankers who try to do that will have 0 chance of success and complete chance of failure.
They manage that risk by scanning ships and cargo, getting a good warpin and making sure they have calculate the DPS required to be successful. It’s not that there is 0 risk for gankers. It’s that they manage the risk so their risk of failure is as low as possible.
Why not just do the same as a freighter pilot? Why not manage the risk better and reduce it? There are a range of ways to reduce the risk of failure as a freighter, but time and time again, those steps aren’t taken.
20% of the Obelisks lost in highsec in the last 30 days were during wars. Why would you even undock in that situation?
Same when it goes for avoiding ganks. Why would you even undock is you haven’t prepared yourself properly?

Indeed, and those who are ganked are doing the exact opposite. They are actually increasing their risk.
The answers here are rather…unpleasant. Either ignorance, laziness, greed or some combination of these. I’m open to other reasons, but can’t think of any.

im sorry… but if you think about it, it makes sense:
when you undock, consider that ship already lost.
in high sec, use t1 mining barges… the covetor is what you should be using for a fleet mining op. the retriever and proc are great for solo ops, or maybe one/two miners… if you have a hauler, or a popoise/orca, why would you mine with ANYTHING ELSE than a covetor? it gives you the MOST m3/hr to haul… its also the least expensive for most m3/hr
in lowsec, where you are alone ie no local or very low traffic, I prefer to use the t2 mining barges… and make even more of the time I have when on field.

This set up is NOT an anti ganking setup but is for npc rats… and basically you can sit there all day in low sec with this setup and HAVE MORE TANK than you need for npc…
as for ganking… WARP YOU ■■■■■■■ FLEET OUT
WATCH LOCAL!!! set the pirates to RED and setup an intel channel, alts in opposing systems to give you +1 jump out warning.
I have NEVER tested these for ganking… simply because my getting ganked while mining days are long gone. Your main weapon or defense against these ganking clowns is intelligence and creativity. MINE IN SYSTEMS not popular for mining or ganking… mine in dangerous space as to lower your population, etc… think about it before you try it. Setup a plan and a contingency. the booster is always the one who needs to watch the local or intel and WARPS THE FLEET OUT when danger is reported or spotted. the booster is the more expensive ship of the fleet, and warps out pretty fast, the miners take a few seconds longer to warp out. 
IF YOU MUST or are in a nice low sec pocket, nullsec pocket… use the same porpoise fit but with hulks…

This gives you at least SOME resists and capacity to tank either small gang frigs or npc rats.
the hulk is better yes… but it is more expensive. So my rule is… we dont use hulks unless we are watching one system out, and have intel up, and are in fleet, and booster is the one in charge to warp fleet out.

so find a nice n quite system far from the ganking feasts taht occur. as a ceo or director or mining op leader, it is your responsibility to make sure your division is most efficient.

In addition to the post above.
If you’re mining in hisec, get off the beaten track, get 10+jumps away from a hub and you’ll find systems with more belts than locals; you’ll rarely see local top single digits if you get a good one. Brucie’s Big Bonus is that they often collect anoms too.

ganking is fun. EVEN IF YOU DONT DO IT RIGHT. something about shooting someone where they least expect it or where they assume they are safe is satisfying. I dont care if I succeed necessarily but more importantly maybe i want to get my point across… the last guy that even scanned my hauler? I pop his ass every chance I get with an alt now… I bounty him with my mains so he knows who it is. lol
Some actions have a lifetime of consequences … and that is what I like about eve and all.
I had a miner sitting in HS years ago and got ganked by code… sure it happens. but how many times do you see immediate revenge? get a few alts, find their systems where they carebear in or where ever they have logistics… and GANK THEM BACK SON!! I havent ever seen another code gank since. that was what 7 years ago. I think it was my GF account at th time, so wasnt even this main that I have now. I love ■■■■ talking … and trolling… I do it well its distracting and I can get people sucked in so easily. intellectually it politics and trolling that have the person to person effect. so dont forget to make threats and say all kinds of bad words! haha
