Isn’t that the smart move? Live to fight another day? I’m get why “having the fight” is fun, but at the same time prudent play is good in that it makes the game interesting on the whole, IMO.

Of course, but the problem is if you do this, then fights could become meaningless. One of the nice things about EVE is your actions have consequences…

If the option to take fights without consequence existed, EVE would be Battlefield in space.

It’s kind of like the argument surrounding people camping systems under cloaks, only this time It’s you who is looking for a way to get your opponent to engage a superior force against their will. Interestingly SOV has been adjusted repeatedly to prevent this exact thing from being the norm, which is probably why your people were reluctant to leave the thing unguarded to chase them into their systems.

What you want is already in place… be in an alliance big enough that you can afford to lose what you bring. That’s not worked out so well, but it is what it is.

An analogy, modified to fit EVE:

When there’s a bunch of children continuously ringing your, and your neighbors, doorbells and running away, the best option is visiting them and beating the ■■■■ out of them. Letting the children keep doing it without consequences will eventually grow the amount of children doing it, which is not a good way of handling the situation. Plus, when the children grow up eventually, they’d be even worse assholes.
