You got the fact that Jita is the biggest trade hub right. You’re off base about everything else.
Your chosen empire has no effect on gameplay beyond some starting skills and where you physically start. Full stop. You don’t get shot at as a Gallente character in Jita. (unless you’ve managed to anger the State due to your actions)
I don’t know what you mean by quests, because there are plenty of agents around Jita, including some career agents that function as a tutorial. The career agents are identical except they give out faction-appropriate ships and weapons and when you finish a tutorial mission chain you get faction standing with their faction. You don’t have to take missions for an Amarr corp because you’re of Amarrian origin.
We already have many services for delivery of space junk, I advise you to find one. Connecting all markets would be a bad idea, logistics are important to EvE.
Oh, and I’d abandon your quest to find the ethical businessman in Eve. The main things that keep someone from screwing you over is you not being worth screwing over.
