The Rifter is cheap and deadly when fit proper, good pilot in a rifter is more than capable of punching well above itās weight
Mining as a new player is probably one of the lowest isk/hr activities in the game. Back when I was a two week old player I went to low sec and thrived. I started out with exploration and scannable combat sites. Sure, I lost dozens of ships but earned way more than my losses, and low sec is a lot quieter nowadays than back in 2013.
So:
Eve has dozens of strategies for situational awareness, most of these donāt rely on skill points or fit, but knowledge of the game. My rule of thumb is that a PVE ship should earn itself back in half a dozen sites. You typically can avoid most (but not all) attacks often enough to earn twice the value of your ship on average before you lose it.

EvE was always a bit of a niche game, and it definitely still is; add to this that it has aged and the willingness of the average customer these days to spend this much time on, well, much of anything really, has guttered.
It has happened to nearly all the MMOs, if you look around and think about it.
CCP clearly understands this as theyāre trying to get a UI/usability overhaul and NPE refactoring completed. Personally, Iām a little concerned that they arenāt further along on it, but then I donāt know their finances or their resource load (and am not the type to closely follow every syllable in every venue these days).
They need to flip their model, but I see no way they can without breaking the whole game. Well, except if they maybe take No Manās Sky out to a nice dinner and make a beautiful baby that blends planet-side in over time, perhaps by region, as cloud balanced instances that can support all the economy on the ground that they do in space.
The OP isnāt wrong about how clunky, slow, frustrating, and grindy things areā¦ they just donāt know thatās how gaming was when EvE was new. (chuckle)
If CCP can manage to fund and deliver expansions of planets/regions and related systems, then link them to whatās happening in space?

As for trying to run in low/null aloneā¦ um, noā¦ not a good idea until youāre better equipped and trained to hold your own. And even then, gangbangs are common and I suppose even expected.
OP, believe it or not itās actually gotten betterā¦ but thatās mostly because all the real murder hoboes left long ago.

Have you tried going to null? They are actually safer than HS plus they have better stuff and you can get everything from there. People with JFhaul all the stuff youāll ever need. And you will also have a taste of PvP.

Mining in low-sec is great IF YOU DONT MIND LOSING SHIPS
I have spent hours mining away kernite in low-sec zones only to get ganked, whipped and prodded by some big corps with cloaks and big guns
HOWEVER
It all depends on you aspect of the game. If you want to hate something, you will hate it.
If you want isk, and fast, simply hop in a venture with some miner 1ās (less than 1m total fit) you dont even
need an afterburner (it will take longer but less loss if you get ganked)
find a 0.4 zone
and look for some kernite asteroids
kernite is currently (as the time I am writing this) VERY inflated and costs roughly 800 per unit
You can make 20m in roughly 10 minutes
An small meta AB is about 20k ISK on market, donāt be stingy
