This is what we call “coca”, a kind of pastry cake which Wikipedia will explain better than I could.
This Saint John’s coca with candied fruits and pinenuts is absolutely fluffy, sweet and delicious.
(The green stuff is candied and tinted watermelon; there is a bitter divide between sane, decent human beings who enjoy all candied fruits and drooling morons who dislike candied watermelon)

I had visited my mother after my doctors appointment and this is what my mother had made me for brunch.
Fresh garlic sliced on sourdough toast with olive oil dripping over smashed avocado and cherry tomato’s.

Ingredients:
- 2 slices of sourdough bread
- 1 ripe avocado
- 2–3 cloves fresh garlic, thinly sliced
- A handful of cherry tomatoes, halved
- Extra virgin olive oil
- Salt & pepper, to taste
Sweet & Sour Pork, Fried Rice and a Pepsi.
Has anyone tried laying a piece of meat, poultry or fish across pineapple slices and then slowly cook the meat in Scillian Virgina Olive Oil? You’ll have to turn the meat or fish over to flavor each side.
A big slab of ribs wrapped around a pineapple or maybe stuffed inside a coconut and then cooked might be rather tasty.
